The most recognisable lavender of all — each spike is crowned by two or three upright purple bracts, like rabbit ears, above a dense cone of tiny florets. Unlike the rare Green Lavender, this is the common lavender found across the Mediterranean.
It grows loose in dry, sun-baked scrubland across inland Algarve, with a classic lavender aroma — sweeter and more floral than the collection's other botanicals.
Freeze-dried whole, it keeps its intense purple colour and the bracts' silhouette even out of water. The taste is bitter and camphorous — its place isn't on the plate, it's the luxury garnish: floats intact on a cocktail, or gets lightly torched just before serving, releasing an intense aroma over the drink.
