Lavandula viridis · Foraging 2026

Unlike the common purple lavender found across Europe, Green Lavender is a botanical rarity — it grows only in a narrow strip of southwest Iberia, and nowhere else on the planet. We find it loose among limestone outcrops inland from the Algarve, where few other plants survive.

Its flowers aren't purple: they're a pale yellow-green, almost translucent, wrapped in green bracts that give the plant its name. The scent is wilder and more resinous than traditional lavender — closer to rosemary and pine than the sweet floral perfume most people expect.

Freeze-dried whole, the flowering stem keeps its shape and colour nearly intact. Perfume a tea, a honey, an oil infusion, or burn it as natural incense — just as has always been done in the Algarve hills.
