A wild cousin of borage — taller, spinier, more intense — large blue alkanet grows along roadsides and dry terrain across the Algarve. We harvest the flower at peak bloom, when its blue-violet reaches its deepest tone.
Freeze-dried whole, the flower keeps its shape and colour nearly intact — a darker, more saturated blue than common borage, almost electric. Every petal stays recognisable, every vein visible.
Finish a dessert, float it in a cocktail, colour a salad. Its tone is so intense a single flower transforms any dish.
