We are not a processing unit. We are a laboratory.

Our "insanity" is a deliberate refusal to accept the decline of flavour and the standardisation of food. While the industrial ecosystem sacrifices structure, aromatic profile and the soul of ingredients for volume, we choose the opposite path.

We do not choose what is left over — we choose what is extraordinary. The most fragrant piece, the most beautiful, at the peak of its ripeness. Our criterion is simple: if it does not belong on our table, it does not belong on yours.

Our story

The Truth in Origin

We are a family of five. When my three children looked for the live flavour of fruit out of its natural season, the answer the global market offered was an opaque label with the generic mention "NON-EU". No face, no origin, no truth.

We refused to accept anonymity in what nourishes our own. That intolerance for industrial opacity drove us to begin our own process.

Today, every fruit that enters our laboratory is harvested alongside Algarvian producers we know by name. Our wild and botanical range is patiently hand-collected by us, directly from nature.
