Elder
Flower

Elder is native to Portugal, but rare in the Algarve — it prefers the damper climate of the North and Centre. Down south, our flowers come from forgotten elder shrubs and from the orchards of fruit growers who still keep them among their trees.

Each cluster is a lace of dozens of tiny white florets, with an intense aroma of honey and must, unmistakable as soon as you lean in.

Freeze-dried whole, the flower keeps the umbel's shape and colour nearly intact. The base of traditional elderflower cordial and tea, now also reinvented in fine-dining desserts and cocktails.

No additives. A rarity within a rarity.
