Borage Flower

It grows loose in wastelands and roadsides across the Algarve — borage isn't planted, it's found. We harvest the star-shaped blue-violet flower at peak bloom, when colour and flavour are at their most intense.

Freeze-dried whole, the flower keeps its perfect star shape and near-intact living colour — every petal, every vein, still recognisable. The flavour is fresh and lightly sweet, with a cucumber-like note reminiscent of the fresh flower.

Finish a salad, float it in a cocktail, freeze it into an ice cube, perfume a dessert. Few flowers bring this much colour for so little effort.

No additives. No cultivation. Just what the land offered on its own.
