Roses

They grow loose in hedgerows and roadsides across the Algarve — the wild rose isn't planted, it's found. We harvest the flower at peak bloom, when the petal holds its maximum fragrance and colour.

Freeze-dried whole, the petal keeps its living colour and its near-translucent fragility — every vein, every petal, still recognisable. The aroma is delicate and floral, far closer to the wild rose than any cultivated version.

Perfume a tea, finish a dessert, infuse a cocktail or a honey. A handful is enough to turn the simple into something memorable.
