Orange

Orange groves perfume the Algarve long before the fruit ripens — a scent you'd recognise blindfolded. We harvest at the exact point between sweet flesh and bitter peel, freeze-drying immediately to lock in a tension of flavour that time usually erases.

Held to the light, the slice turns almost translucent, like stained glass. The peel carries a citrus bitterness that balances the sweetness of the flesh — a complexity fresh orange rarely delivers on its own.

It comes alive in a glass: garnish a cocktail, steep a hot tea, finish a dessert, or pair with a cured cheese board. As at home behind a bar as on a Sunday table.
