Exotic by origin, but Algarve-rooted — grown in the same greenhouses and orchards as the rest of the collection. We harvest when the pink skin reaches its deepest tone and the flesh sits at the exact point between sweet and neutral.

Inside, a white or magenta speckled with crisp black seeds — a texture that barely changes through freeze-drying, keeping the visual contrast that makes this fruit so recognisable. A single drop of water is enough to bring it back to its original state.

Finish a dessert, colour a bowl, infuse a water. It is as much an ingredient as an ornament — few fruits do both so well.
